Update setup wizard to use new descriptive folder names

The folders were renamed from simple numbers (01, 02, etc.) to descriptive names
(01_standalone_grafana, 02_metrics_with_prometheus, etc.). This commit updates
the setup_wizard.py script to use the new folder structure while maintaining
the clean UI with numbered options.
